The recipe

Why tequila (and which one)
Blanco tequila is the mojito’s road-not-taken: where white rum whispers, agave rings — a vegetal brightness that locks into lime and mint like it was born there. Use an unaged blanco; a reposado gives you a rounder, softer highball; leave the añejo on the shelf, its oak argues with the mint.
